What are they?

Onions are an easily grown vegetable with a lot of nutrients and versatility. Typically, onions are grown for their flavorful bulbs, but the green tops can be used in recipes as well.

Health benefits:

According to Healthline, onions have a lot of vitamin C, vitamin B6, folate, and antioxidants.

How to store:

Bon Appetit recommends most onions (especially ones with papery skin) be kept in a dark, dry and cool place where they can last for long periods of time. Beware of storing onions with other types of produce, as they can cause one another to spoil more quickly. 

Chopped onions can be frozen for easy use later.

Certain varieties such as green spring onions can be regrown in a cup of water in a sunny spot – even several times! A Piece of Rainbow blog gives instructions for regrowing onions from scraps here.

Make sure companion animals can’t get to them, as onions are toxic to cats and dogs.
