What are they?

Carrots are a crunchy root vegetable that are typically orange but can be found in a variety of colors! They have a sweet taste and are very versatile in cooking. The greens can be eaten in a similar way to other leafy greens, such as in this easy carrot-top pesto.

According to Healthline, carrots are full of antioxidants, vitamin K1, potassium, fiber, and vitamin A.

How to store:

Carrots can last a long time when properly stored. Wash all parts of the carrot (greens too!), dry them, and trim off the greens. You can store the carrot greens separately for easy use. Keeping the skin on the carrots can help them store for longer. After carrots are fully dry, store them in an airtight container with a paper towel to absorb moisture.

Ways to prepare:
